Capers are the unopened flower buds of the spiny shrub Capparis spinosa. Non-pareile (unparalleled) are the smallest and most desired variety. Firm in texture with a bright, briny flavor, capers are essential such dishes as veal piccata, tartar sauce, or pasta puttanesca. Give them a quick rinse, use them liberally and refridgerate after opening.
