Ingredients:

  • Marella Fricelli Pasta
  • Eggplant, cubed and fried
  • Fresh tomatoes, chopped
  • Garlic, minced
  • Olive oil
  • Fresh basil
  • Grated Parmesan cheese
  • Salt and pepper

Instructions:

  1. Cook the Fricelli in boiling salted water until al dente.
