Mediterranean Scialatielli with Anchovy Garlic Drizzle

Ingredients:

  • Scialatielli Pasta (Graganano Napoli Gentile)
  • Fillets of Anchovies in EVOO
  • Porcini Mushroom Powder (Liveri)
  • Garlic Chile Oil (Casina Rossa)
  • Extra Virgin Olive Oil (Partanna)
  • Balsamic Vinegar (Duke Of Modena)

Instructions:

  1. Cook the Scialatielli Pasta in a large pot of boiling salted water until al dente; drain and reserve some pasta water.
  2. Warm 2 tablespoons of Partanna Extra Virgin Olive Oil and a teaspoon of Garlic Chile Oil in a skillet over medium heat.
  3. Add a tablespoon of Anchovy Fillets, stirring until they dissolve into the warm oil.
  4. Sprinkle in a teaspoon of Porcini Mushroom Powder and toss to infuse the oil with earthy flavors.
