Anchovy and Garlic Spaghetti


  • 500g spaghetti
  • Principe di Gerace Anchovy Fillets in EVOO
  • 4 cloves garlic, minced
  • Red pepper flakes (optional)
  • Extra virgin olive oil
  • Fresh parsley, chopped
  • Grated Parmesan cheese, for serving


  1. Cook the spaghetti in salted water until al dente; drain, reserving some pasta water.
  2. In a pan, heat a generous amount of olive oil over medium heat. Sauté garlic until fragrant.
  3. Add the anchovy fillets, breaking them up with a spoon, until they melt into the oil.
  4. If desired, add a pinch of red pepper flakes for heat.
  5. Toss the spaghetti in the anchovy and garlic oil, adding some reserved pasta water if needed for consistency.
  6. Garnish with fresh parsley and serve with grated Parmesan cheese.
