This exceptional finishing oil has only .3% oleic acid. It has a delicate fruity taste with a peppery finish and is surprisingly not bitter. This oil can be best appreciated consumed raw on salads, fish, grilled meats, and carpaccio. The gold paper protects it from light and helps to maintain its freshness.
