Consider Acidity Levels

Next up: acidity. It generally corresponds with an oil’s quality, freshness and care during production. For the premium stuff, international standards require: · Extra virgin olive oil: Acidity ≤0.8%
· Virgin olive oil: Acidity ≤2% · Pure olive oil: Acidity ≤ 1.5%

Why does acidity matter so much? Too high and it indicates poor handling procedures that risk yield faults degrading flavor. The best extra virgin lies well below 0.5%. If acid creeps up during transport or storage, delicate fruitiness morphs into unpleasant harshness or rancidity over time.
