Emilia Potato Gnocchi are soft potato dumplings made in Correggio, in Italy's Emilia-Romagna region, by Grandi Pastai Italiani, in a vacuum-sealed 16 oz (454 g) pack that keeps on the shelf until opened. Drop them into salted boiling water and they are done in 2 to 3 minutes, when they float; toss with butter and sage, pesto or a tomato sauce. Ingredients: mashed potatoes (water, dehydrated potato flakes with mono- and diglycerides and natural flavors), wheat flour, potato starch, rice flour, salt, lactic acid, potassium sorbate, spices. Contains wheat. Store in a cool, dry place; once opened, refrigerate and use within 3 days.
